DELICIOUS Smoothie Recipe



Peach, Berry, Spinach Smoothie

Tried this smoothie this morning for breakfast, all frozen fruit, and added some flavorless protein powder and it was DELICIOUS!!! Even my young child liked it! TRY IT!!
 
1 cup peach slices (fresh or frozen)
1/2 cup blackberries (fresh or frozen)
1 cup spinach leaves (packed fresh)
1 1/2 cups grape juice (white)
1/2 cup fruit (ice if using fresh)

Sweet Corn & Black Bean Salsa


Sweet Corn & Black Bean Salsa

1/2 cup red onion, chopped
1 1/2 cup ripe tomato, chopped
1 can yellow corn
1 can black beans
1 1/2 cup cilantro, chopped
1 tblsp canola oil
1 tblsp fresh lime juice
1/2 tsp ground cumin
1/8 tsp salt
ground pepper to taste

Easy Healthy Deliciousness


What you need:
3/4 cup frozen corn or 1 small can corn
3/4 cup frozen peas or 1 small can peas
1-2 cups of brown rice
2 large chopped red potatoes
1 cup chopped carrots
2 tbsps sofrito
1 tsp chili powder
1 tsp of all seasoning
1 chopped and/or minced garlic
1/2 finely chopped small onion
add sea salt and pepper to taste
2 cups of low sodium and msg free chicken stock

I added leftover previously cooked chicken, pulled it from the bone and chopped it up nicey nice and threw that in as well for protein.

How to prepare:
Put all veggies, rice and seasonings in pot or crock pot.
Mix thoroughly.
Add chicken stock and mix again.
Add salt and pepper to taste.
On stove, leave on medium heat 1- 1 1/2 hr
In crock pot, high for 4 hours, stir intermittently if possible.
It is done when the potatoes are tender and brown rice is fully fluffed.
Serve hot.

Easy Chicken Salsa

Salsa
Prep Time: 10 minutes

1 crate of cherry tomatoes, cut in halves
1 medium sized onion, chopped small
1/4 cup scallions, chopped small
1 medium sized green, chopped small 
1/4 cup of cilantro or parsley
2 tbsps lemon or lime juice
1 garlic, minced
salt and pepper to taste
a dash of chili powder (optional)

* combine all of the above ingredients in a bowl or jar with a lid
* tightly secure the lid
* holding the lid down and the bottom, shake until all blended
* put in the fridge for at least 2 hours

Chicken
Prep Time: 10 minutes Cook Time: 20 minutes

1 tbsp olive oil
2 tbsps of sofrito
1/4 tsp chili powder
1/4 tsp kosher salt
1 tsp onion powder
a few sprinkles of pepper
1/4 cup shredded cheese

* put pan on medium heat with 1 tbsp olive oil
* rinse chicken & chop into small cubes
* season chicken in a metal bowl with chili powder, salt, onion powder and pepper
* add Sofrito to the pan and allow to simmer
* add chicken to pan and mix thoroughly
* cook on medium heat for 15 minutes, stir frequently
* make sure chicken is thoroughly cooked before serving

- On dessert plate place about a deck of cards size of chicken
- Add salsa to the top or on the side
- Sprinkle with cheese and add a few tortilla chips on the side
- Enjoy a healthy, delicious and easy lunch, dinner, or snack.

Later you can use extras in a quesadilla, in a spinach wrap, or with brown rice.

Delicious Cold Weather CrockPot Stew


Easy Veggie Stew

1 chopped zuchinni
1 chopped squash
1/2 carton of cherry tomatoes- cut in half
1 cup chopped broccoli
2 tbsps sofrito
1 tbsp minced garlic
1 tbsp chili powder
2 cups of water or sodium free vegetable stock
1 tsp pepper
1-2 pinches of sea salt

*Mix thoroughly, cover and set on low for 4-5 hours
*Try to mix every hour or so.

*You can also add chicken, turkey kielbasa, potatoes or gnocchi.
*Sofrito: blended green peppers, garlic, onions, cilantro, oregano.

*Enjoy hot! It's delicious, nutritious and hardy!!
*Have a small green salad on the side.

Delicious Pineapple Salsa



PINEAPPLE SALSA

makes about 2 1/2 cups
Pour over baked or grilled chicken for a delicious and nutritious meal.



*2 cups diced fresh pineapple
*1 cup roma tomato chopped
*1 cup diced red pepper
*1/2 cup chopped cilantro
*1/4 cup finely chopped red onion
*3 tablespoons finely chopped jalapeno pepper, stemmed and seeded or cayenne pepper to taste
*1 clove garlic, minced
*Juice of 1 large lime

Honey Glazed Squash Recipe



I found this recipe because someone gave me a winter squash. I simplified the process by laying out the cut pieces of squash in a casserole dish and glazing with 1 tbsp of honey and 1 tbsp with olive oil instead of butter. I covered the dish with aluminum foil and throw it in the oven along side the chicken. I moved it around every 5 minutes. It cooked total for about 30 minutes, the oven was on 375. During the last 5 minutes I added the second tbsp of honey. When the chicken was done, so was the squash and dinner was delicious. 
  • 1 1/2 pounds buttercup squash (or other winter squash)
  • 1/4 cup melted butter (or margarine)
  • GLAZE:
  • 1/4 cup melted butter (or margarine)
  • 2 tablespoons honey

  • Pierce skin of squash several times and place on a microwave-safe plate in the microwave; cook on high for 6 to 8 minutes. This will soften the squash slightly, making it easier to cut in half.  Overcooking at this point will make the squash fall apart when handling.
  • After microwaving, allow the squash to sit for 2 or 3 minutes. Cut in half crosswise and remove seeds and stringy fibers from the center. Peel away the outer skin of the squash and then cut the two halves into approximately 1 1/2" cubes.
  • Thread the squash cubes onto metal skewers and brush with 1/4 cup melted butter. Place the squash on the grill over indirect high heat and close the cover. Cook for 15 to 20 minutes. Turn 2 or 3 times throughout the cooking time and baste with leftover melted butter.
  • While squash is cooking, mix 1/4 cup melted butter and honey together and heat in microwave until hot. Squash is done if tender when poked with a fork. When done, remove the squash from the grill and place on a platter. Brush the squash with the honey and butter mixture. Serve while hot.
